Apple Spinach Salad


16 Oz. spinach, washed & dried

2 apples, thinly sliced or chopped

1/3 C sliced almonds


½ C balsamic vinegar

1/3 C vegetable oil

1 Tbsp. grainy mustard

1 Tsp. honey

Toast almonds.  To toast them preheat a sauté pan over medium heat, add almonds & cook them for about 5 minutes until they are browned.   Watch them carefully & stir them frequently so they do not burn.  Mix salad ingredients in a large bowl.  Place dressing ingredients in a medium bowl & whisk them together.  Dress salad and serve.
