Black Bean Tacos

1 Tbsp. olive oil

½ medium onion chopped

3 garlic cloves minced

1 15 oz. can of black beans drained and rinsed

2 cups chicken broth

2 Tbsp. canned chipotle peppers in adobo sauce minced with sauce

2 Tbsp. cumin

1 Tbsp. chili powder

1 Tbsp. oregano

½ Tsp. salt

1 Tsp. pepper

½ lime juiced

¼ cup minced cilantro

Heat olive oil in medium saucepan over med-high heat.  Add onions and garlic, sauté for 5 minutes.  Add beans through pepper, bring to boil.  Next reduce heat and simmer for 20-30 minutes until liquid is gone.  Remove from heat, stir in lime juice and cilantro.  Serve with warm tortillas, cilantro, cheese, green onions, tomatoes…whatever you like. 

The adobe chili pepper is not necessary and you can mix up the spices to what suits you or what you have on hand. I made this with 1 cup of dried beans and 6 cups of chicken broth.  I simmered this for 2-3 hours until the beans were tender and some were breaking down.
