Caramelized Onion Jam

3 Medium onions, sliced

3 garlic cloves minced

3 Tbsp. Butter

1 Tsp. salt

1 C red wine

1/3 C honey

1/3 C red wine vinegar

1 Tbsp. lemon zest

Heat butter in a frying pan wit high sides over med heat.  Once butter is melted add onions, garlic and a pinch of salt to the pan.  Cook onions for 15 minutes.  Next, add wine to onions and simmer until liquid is gone.  In a separate pan heat honey over med heat and simmer for 2 minutes, next add in red wine vinegar and simmer for another 2 minutes.  Add honey mixture to onions & simmer until liquid is gone and its like a jam consistency, about 10-15 minutes.  Remove from heat & stir in lemon zest.

The whole process takes about an hour.  I use whatever onions I have on hand and have used rose instead of red wine.  Olive oil or any oil could be used in place of butter.  I have also used spicy honey and that is really yummy!
