Carbonara

2 Tbsp. butter

¾ Lb. bacon

2 garlic cloves, minced

6 C spiralized zucchini noodles or cooked spaghetti noodles

1 C peas

3 eggs beaten

6 Tbsp. grated parmesan cheese

6 Tbsp. pecorino cheese grated

salt & pepper


Melt butter in large sauté pan over med-high heat, add bacon and garlic and brown bacon.  Remove bacon & drain as much fat as you want, leaving at least 3 Tbsps. stir in noodles, add 2 more tbsp. butter if needed.  Sautee zucchini for 5 minutes then add peas and cook for another 5 minutes till done.  Remove from heat & add eggs, salt, pepper & cheese.  Keep it moving so the egg does not curdle.  Enjoy!  


This recipe can be made with prosciutto, sausage, different cheeses, its pretty basic and you can throw in whatever.
