Chick Pea Salad

1 16 Oz. can chick peas, rinsed & drained

8 Oz. feta cheese

1/2 C kalamata olives

1 Cucumber, diced

2 large tomatoes, diced

8 Green onions, chopped

1/3 C basil, chopped


½ C olive oil

½ C fresh lemon juice

6 garlic cloves, minced

1 Tsp. pepper

½ Tsp. salt

Mix all salad ingredients together.  Mix dressing ingredients together except oil.  Drizzle oil slowly into dressing mixture, whisking the entire time.  Dress salad; serves 8.  A protein added to this could make a meal.
