Chicken Satays with Peanut Sauce

4 Boneless, skinless Chicken breasts cut into ¾ in. strips


2 Tbsp. soy sauce

2 Tbsp. fresh squeezed lemon juice

1 Tbsp. honey

1 Tbsp. ginger, minced

1 Tbsp. Srirachi Sauce

2 garlic cloves, minced

½ Tbsp. fish sauce

Peanut Sauce

1 C peanut butter

1 C coconut milk

¼ C Srirachi

1 Tbsp. ginger, peeled & minced

1 Tsp. salt

Combine all marinade ingredients in a bowl and marinate chicken 3 hours or overnight.  Combine peanut sauce ingredients together and mix well.  Remove chicken from marinade & weave slices onto a skewer.  Grill chicken for 10-12 minutes, until done.  Serve the chicken with peanut sauce.
