Frosted Soft Sugar Cookies

1 cup sugar

1 stick butter at room temperature

1 ½ tsp. vanilla

2 eggs

3 ¼ c flour

½ tsp. baking soda

½ tsp. baking powder

In a mixing bowl mix together sugar, butter and vanilla until light and fluffy.  Add the eggs and mix in.  In another bowl mix the dry ingredients together.  Gradually add the flour mixture into the butter mixture until well incorporated.  Put the dough in the refrigerator and refrigerate for 2 hours.

Preheat oven to 400 degrees.  Roll out dough to ¼ inch thick and cut into cookies.  Bake them for 5 minutes on a parchment  lined baking sheet (or wax paper or just on a nonstick cookie sheet).  Remove from oven and let them cool for 10 minutes and then remove them to racks to cool.


1/3 c butter, softened

3 cups powdered sugar

1 ½ tsp. vanilla

1 tsp. coconut extract

1-2 Tbsp. milk

In a medium bowl mix butter until fluffy about 2 minutes, then add powdered sugar and mix together.  Add extracts and milk until desired consistency. 

Frost cookies when cool.
