Grilled Avocado with Tomato Salsa

2 Avocados cut in half and pits removed

1 Tbsp. olive oil

1 Tbsp. lime juice

1 tomato diced

¼ C cilantro, chopped

¼ C onion (any kind) diced

1 Tsp. salt

1 Tsp. pepper


Heat grill to med-high.  Mix together olive oil and lime juice in a bowl and brush onto avocados.  Grill avocados cut side down for 3-4 minutes until you have grill marks.  Mix together, tomato, cilantro, onion and salt and pepper.  Remove avocados from grill and fill the hole with salsa mixture.  I have made these with the rind on and off, if you want it off…do so before grilling.


This recipe is pretty basic and you can get pretty creative with it by adding, cheese, jalapeno, lemon juice, spices, peppers…whatever tickles your fancy
