Grilled Cheese with Brie & Arugula

4 slices of baguette cut on the diagonal

2 slices of brie

Goat cheese

1 tomato sliced


1 Tbsp. butter

Butter one side of each piece of bread; spread goat cheese on the other and then layer tomatoes and arugula, followed by the brie.  Top with bread slice with goat cheese facing brie.  Cook in a nonstick pan on med-high for 2 minutes per side.  Push down with a lid to flatten sandwiches while cooking.

Grilled cheese is easy to modify, with whatever cheeses, lettuce, tomatoes, avocados, etc. you want.  I used herbed goat cheese and soften it so you can spread it.  Keep the cheese next to the bread and the vegies in the middle, that way the veggies do not get super cooked.
