Grilled Salmon with Lemon & Thyme

4 Lbs. salmon fillets

3 Tbsp. Cognac or brandy

¼ C lemon rind, zested

2 Tbsp. red onion or minced shallot

1 ½ Tbsp. brown sugar

1 ½ Tbsp. kosher salt

1 Tsp. pepper

Rub salmon fillets with cognac.  Mix remaining ingredients together and rub over salmon fillets.  Refrigerate salmon fillets overnight.  Grill salmon fillets until cooked through, about 4 minutes per side depending on thickness.
