Fresh Corn

Hot Corn Dip

1 Can whole kernel corn, drained

2 Cans chopped green chiles drained (4oz each)

½ C chopped red pepper

1 C monterey jack cheese, grated

2 Tbsp. jalapeno pepper chopped

1 C mayonnaise

½ C parmesan cheese, grated

2 Tbsp. sliced black olives

Tortilla chips


Preheat oven to 350.  Combine corn, chilies, red pepper and monterey jack cheese.  Stir in mayo & parmesan.  Place mixture in a 2 quart baking dish.  Bake for 30 minutes, sprinkle with olives and serve with tortilla chips.
