Indian Red Lentils

1 Tbsp. vegetable oil

1 medium onion, diced

3 cloves garlic, minced

1 Tbsp. ginger, peeled & minced

1 cinnamon stick

2 Tsp. cumin

1 Tsp. cardamom

1 Tsp. turmeric

½ Tsp. red chili pepper

½ Tsp. red pepper flakes

½ Tsp. salt

½ Tsp. paprika

1 Tomato, diced

1 Cup red lentils, rinsed & drained

3 C water

2 Tbsp. lemon juice

¼ C cilantro, chopped for garnish


Heat oil over med-high heat in a large sauté pan, add onion, ginger & garlic, cook for 5 minutes.  Add remaining spices & tomato.  Cook for another 5 minutes.  Remove mixture from pan, discard cinnamon stick and place lentils and water in pan & bring to a boil.  Reduce heat & simmer for 20 minutes, till done.  Drain excess liquid & lemon juice add onion mixture back to pan.  Heat through, & serve with cilantro as garnish.
