Mango & Black Bean Salsa

1 Ripe mango peeled and diced

¼ red bell pepper diced

¼ green pepper diced

¼ red onion diced

1 c black beans

1/3 C pineapple juice

2 limes juiced

¼ cilantro chopped and 1 Tbsp. reserved

1 Tbsp cumin

½ jalapeno minced

salt and pepper to taste

Combine all ingredients and refrigerate.  If desired sprinkle 1 Tbsp. of cilantro on the top before serving.

This recipe is super easy and can be made several hours before hand.  With this recipe you can substitute any color peppers you want or use just ½ C of 1 type of pepper instead of two ¼ C of different peppers.  Orange juice could be used if you did not have pineapple juice.
