Marinated Pork Tenderloin

2 Pork tenderloins (3/4 lbs.)

2 Tbsp. onion, minced

3 garlic cloves, minced

1 Tsp. cinnamon

¼ C soy sauce

2 Tbsp. Sherry

¼ C packed brown sugar

2 Tbsp. olive oil

1 Tsp. cornstarch


Combine marinade ingredients in a bowl except cornstarch & mix together well.  Add pork & marinade for 2 hrs.to1 day.  Preheat grill to medium-high heat.  Grill on indirect heat for about 20 minutes, until done.  You can baste it while grilling with ¼ C reserved marinade.  With remaining marinade put it in a pan whisk in cornstarch and bring mixture to a boil, simmer & continue to stir for two minutes & remove from heat.  When pork is done, slice it and serve with cooked marinade.
