Parmesan Popovers

1 C half-and-half

2 eggs, beaten

1 C flour

1/2 Tsp. salt

1 Tbsp. Parmesan cheese grated

2 Tbsp. butter, room temperature

In a small bowl whisk together the half-half and the eggs until the mixture is uniform in color & texture.  In a large bowl mix together the flour and salt until well blended.  Next whisk in the egg mixture & then add the Parmesan cheese. Whisk together until there are only tiny lumps.  Spread the butter into a 12 cup muffin tin and bake in a preheated oven at 400 for 4 minutes.  Remove the pan from the oven and swirl butter around to coat muffin cups.  Whisk batter and then pour it into the muffin cups a little less than half way.  Bake for 25 minutes.  They will be puffy, browned & crisp.  Serve them with warm butter or jam.
