Peanut Butter Cup Cookies

24 Mini Resses Peanut butter cups peeled and put in the freezer

½ C butter, softened

½ C white sugar

½ C brown sugar

1 Tsp. vanilla extract

1 egg

1 ¾ C flour

1 Tsp. baking powder

Cream together sugars, butter and peanut butter until fluffy, then add vanilla & egg; mix again.  Mix in flour & baking soda.  Refrigerate cookies for 1 hour.  Roll cookies into a ¾ inch balls and place on a cookie sheet lined with parchment paper.  Bake in a 375 degree preheated oven for 8 minutes. Do not over bake.  Remove from oven and immediately press one peanut butter cup into each cookie, cool for 5 minutes then place cookies on a wire rack to cool.

Hersheys kisses could be placed in the center as well and you could make a sugar cookie recipe and add the cherry or mint Hersheys kisses, yummy!
