1 Tbsp. vegetable oil

2 med onions thinly sliced

5 cloves garlic finely chopped

2-3 inches ginger peeled and finely chopped

8 cups chicken broth or beef

¼ C fish sauce

4 cloves

2 cinnamon sticks

2 star anise

1 jalapeno pepper finely chopped

1 Tbsp. fennel seeds

1 Tbsp. coriander seeds

1 Tsp. salt

1 Tsp. pepper

8 Oz. beef loin, sirloin steak, round eye, thinly sliced against the grain

8 Oz. rice noodles


Bean sprouts

Lime wedges


Green onions

Jalapeno pepper

Hoisin sauce

Heat vegetable oil in large pot, add onions, garlic and ginger and sauté for 5 minutes.  Add broth, fish sauce, cloves, cinnamon sticks, star anise, jalapeno, fennel & coriander seeds, salt and pepper.  Bring to a boil and simmer for 30 minutes.  Strain the broth and add it back to the pan.  Bring back to a simmer.  Cook rice noodles in boiling water for 3 minutes and drain.  Assemble bowls with raw meat on bottom, next noodles, then pour in soup.  Add whatever garnish’s you like.  Serves 4.

If you do not have all of the spices you can substitute Chinese 5 spice, you can add mushrooms, carrots, whatever sounds good to you.  You can always taste it and add more of whatever!
