Quinoa Cucumber Tomato Salad


3 C cooked quinoa

2 C cucumber, cubed

2 C cherry tomatoes, halved

½ C cilantro, chopped


2 Tbsp. Olive oil

2 Tbsp. fresh lime juice

2 garlic cloves, minced

1 Tbsp. cilantro chopped

1 Tsp. sugar

½ Tsp. Salt

Mix dressing ingredients together.  Place salad ingredients in a bowl, mix, add dressing and mix again.

I did not have avocado but would have added that if I did or feta or cotija cheese would be good as well.  Quinoa is a great backdrop for any vegetable, herb or cheese.  Mix in whatever you want and enjoy!
