Roasted Asparagus with Pine Nuts & Lemon

3 Tbsp. pine nuts

1 bunch of asparagus, trimmed

4 Tbsp. olive oil

5 cloves garlic, thinly sliced

1 Tsp. salt

1 Tsp. pepper

zest of 1 lemon

1 Tbsp. lemon juice

3 Tbsp. parmesan cheese

Roast pine nuts in a small pan over med heat till toasted, about 4 minutes. Watch them, because they go from roasted to burnt quickly.  Place on a jelly roll pan, drizzle with olive oil, garlic, salt & pepper.  Roast asparagus in a preheated oven at 425 for 12-15 minutes.  Remove from oven, and toss in a bowl with lemon juice, zest, cheese & pine nuts.

This recipe can be used with different vegetables, like green beans…you could substitute sliced almonds, different cheeses…whatever you think.
