Roasted Brussels Sprouts & Yams

2 yams, peeled and cubed

14 brussels sprouts, cleaned and halved

2 Tbsp. olive oil

1 Tsp. salt

1 Tsp. pepper

Toss yams and Brussels sprouts in olive oil and salt and pepper.  Spray a baking dish with pam and lay vegetables out on pan.  Place in a preheated oven at 400 and bake for 30-40 minutes, until the veggies are tender and browned to your tastes.  Flip them half way through. 

These vegetables are good compliments to each other since they can be roasted for the same amount of time.  You can add different seasonings or vegetables.
