Roasted Candied Carrots

10 large carrots

2 Tbsp. olive oil

1 Tsp. salt

1 Tsp. pepper

Peel Carrots, toss in olive oil and salt and pepper in an ovenproof dish.  Place in a preheated oven at 400 for 30 minutes.  The browner they get the sweeter they taste.  Do not let the brown bits in the photo fool you; those parts taste like candy.

It is easy to roast tasty vegetables for dinner, just use olive oil and salt and pepper.  I love roasted broccoli!
