Roasted or Grilled Asparagus
Bunch of asparagus
1 Tbsp. olive oil
1 Tsp. kosher salt
1 Tsp. fresh ground pepper
Juice of ½ of lemon if desired
Cut ends of asparagus and place in a shallow bowl. Drizzle with olive oil and add salt and pepper, mix together.
Roasting: Roast in the oven on a baking sheet or shallow dish at 425 for 12-15 minutes.
Grilling: Grill on in a grill pan or directly on the grill using indirect heat for 6 minutes.
Asparagus is done when tender. If desired squeeze lemon over the asparagus before serving.
Roasted vegetables are very simple to make and you can modify the seasoning to suit your taste or add different spices to compliment your meal. For instance, if I were serving this with salmon I would use a couple of the spices from the salmon on the asparagus as well. If roasting in the oven you can add minced, garlic, onion or ginger.
