Roasted Red Pepper Hummus

Roasted Red Pepper Hummus


1 Can chickpeas

1 Red bell pepper

1 Tbsp. olive oil

½ Tsp. salt

¼ C tahini past

2 Tbsp. lemon juice

2 Tbsp. water

2 Cloves garlic, smashed

1 Tbsp. Cumin

1 Tsp. smoked paprika

1 Tsp. salt

1 Tsp. pepper

¼ Tsp. cayenne pepper

2 Tbsp. olive oil


Cut the red bell pepper into four sections by removing the middle, coat with 1 Tbsp. olive oil and ½ Tsp. of salt.  Grill pepper for 5 minutes a side until softened and slightly browned (I do not completely roast them).  Combine remaining ingredients except, last 2 Tbsp. of olive oil in a food processor and blend till smooth.  With processor running slowly pour in remaining 2 Tbsp.’s of olive oil.  Serve with veggies.
