Spinach Mushroom Casserole

1 Tbsp. olive oil

20 Oz. fresh spinach

16 Oz. sliced mushrooms

¼ C onion, chopped

1 Tsp. pepper

1 Tsp. salt

2 Tbsp. lemon juice

¼ Tsp. liquid smoke

1 ½ C cheese, shredded (I used goat cheese, swiss & parmesan)

Heat oil in a large sauté pan over medium-high heat, add onions, mushrooms, spinach, salt & pepper till spinach is wilted.  Stir in lemon juice & liquid smoke. Spray an 8x8 pan with cooking spray.  Spread mixture in the 8X8 ovenproof dish, and cover with cheese.    Bake in a preheated oven at 350 degrees for thirty minutes.   I sprinkled some bread crumbs on top before baking, to give it a little crunch.

Any type of cheese you want to use is great! You could substitute Worchester sauce for the liquid smoke or omit it entirely.
