Steamed Mussels with Lemon & Wine

6 Lbs. of Mussels (I buy them at Costco and it is one package…in Canada they come in two totaling 6 lbs. together.)

2 Tbsp. olive oil

3 Tbsp. butter

3 Cups white wine

1 cup scallions sliced

6 garlic cloves minced

1 lemon juiced (cut the rest up and throw it in the pot)

1 Tbsp. basil

1 Tbsp. tarragon

1 Tsp. salt

1 Tsp. pepper

2-3 tomatoes chopped

Heat oil and butter in large pot till butter is melted, add garlic and sauté for 2 minutes, add scallions and sauté 3 more minutes.  Put in the rest of ingredients except mussels and bring to a boil. After mixture boils add mussels and cover.  Steam them for 5 minutes until most of them open.  Serve them with the broth and warm bread!

The wine and garlic, butter and oil are the base here and you can add whatever spices, onions, vegetables, etc. 

Costco does have the best deal on mussels and they do not last so this recipe serves a lot.
