Thai Cucumber Salad

1/2 C white vinegar

1/2 C brown sugar or white

1 Tsp. salt

1 large cucumber, cut into bite size pieces

2-3 Serrano chilies or 4-6 small Thai chilies

½ C roasted peanuts, chopped

1/3 C cilantro with stems, chopped

Combine vinegar, sugar, & salt in a small saucepan over medium heat.  Bring to a boil, remove heat & cool to room temp.  Combine rest of ingredients in a bowl and pour dressing over.  Let salad rest for 30 minutes in the fridge.
