Yam Fries

4-5 yams, peeled & cut into wedges (I used a French fry maker, to cut mine)

3 Tbsp. olive oil

1 Tbsp. pepper

½ Tbsp. kosher salt

Maple Chipotle Sauce

1/2 C Mayonnaise

1 Tbsp. maple syrup

1 Tbsp. Chipotle peppers in adobe sauce, minced

Put yams in a bowl and drizzle oil, and salt & pepper over.  Mix well.  Spray 1 or 2 jellyroll pans with Pam and lay yams in a single layer.  Give them room, so use two pans if necessary.  Bake in a 450 preheated oven for 45 minutes, until tender.  Mix all sauce ingredients together.  If you want a sweeter or spicier sauce increase the syrup & chipotle peppers.  I use 2 Tbsps. of the peppers.

I love yam fries pretty plain, but you can jazz them up with cilantro, lime, sugar, homey, cheese, whatever sounds good to you.
